Ingredients

Main Ingredients

  • 2 teaspoons minced garlic
  • 1 yellow onion, chopped
  • 1 tablespoon oil
  • 2 pounds chopped beef (stew meat or top sirloin, cut into 1-inch pieces)
  • 4 cups beef broth
  • ¼ cup Worcestershire sauce
  • 1 cup sliced mushrooms (optional)
  • 1 teaspoon Italian blend seasoning
  • 2-3 teaspoons salt (or to taste)
  • ½ teaspoon cracked black pepper (or ¼ teaspoon ground pepper)
  • ¼ cup cold water
  • 3 tablespoons corn starch

Serving Suggestions

  • 4 cups cooked white or brown rice OR mashed potatoes OR cooked egg noodles

Instructions

  1. Sauté Aromatics: Set your pressure cooker to the SAUTE function. Add the oil, chopped onions, and minced garlic. Stir frequently and cook until the onions become translucent and the garlic is fragrant, about 2-3 minutes.
  2. Sear Beef and Combine Ingredients: Add the beef chunks to the pot and sear for about 1 minute to brown the edges. Then add the beef broth, Worcestershire sauce, sliced mushrooms (if using), Italian seasoning, salt, and pepper. Stir everything together to combine the flavors.
  3. Pressure Cook: Secure the lid of the pressure cooker and set it to PRESSURE COOK or MANUAL mode. Turn the valve to the SEAL position and set the timer for 35 minutes to tenderize the beef.
  4. Natural and Quick Release: When cooking time ends, allow the pressure to naturally release for 10 minutes without intervention. After 10 minutes, carefully turn the valve to VENT for a quick release of any remaining pressure. Once the float valve drops, remove the lid and set the pot to SOUP mode.
  5. Thicken Gravy: In a small bowl, mix the cold water and corn starch thoroughly to make a slurry. Stir this slurry into the boiling broth in the pot to thicken the gravy. Continue stirring until the gravy has thickened to your liking.
  6. Final Seasoning and Serve: Taste the gravy and adjust salt and pepper if needed. Serve the beef tips with the rich gravy over cooked mashed potatoes, rice, or egg noodles for a complete meal.

Notes

  • You can omit mushrooms if you prefer a mushroom-free version.
  • Adjust the salt according to your dietary needs or taste preference.
  • For thicker gravy, add more corn starch slurry gradually.
  • Leftovers can be stored in the refrigerator up to 3-4 days and reheated in a microwave or stovetop.
  • Use beef stew meat or top sirloin for the best texture and flavor.
