Ingredients

For the Watermelon Juice

  • 2 cups roughly chopped watermelon (rinds removed)
  • 2 fresh rosemary sprigs

For the Cocktail

  • 8 ounces watermelon juice (about 1 cup)
  • 4 ounces vodka (1/2 cup)
  • 4 ounces fresh lemon juice (1/2 cup, from 1-2 large lemons)
  • Plenty of ice
  • Fresh rosemary sprigs (for garnish)
  • Lemon wedges, slices, or lemon twist (for garnish)
  • Small watermelon slices (for garnish)

Instructions

  1. Make the Watermelon Juice: Place the chopped watermelon into a large blender or food processor and blend until completely smooth, ensuring you extract all the natural freshness and sweetness from the watermelon.
  2. Strain the Juice: Position a wire strainer over a large mixing bowl or measuring cup, and pour the blended watermelon mixture through it. Use a spoon or spatula to gently stir and press the pulp in the strainer, coaxing out as much juice as possible. Discard or compost the leftover pulp or freeze it for smoothies.
  3. Store or Use Juice: Use the freshly strained watermelon juice immediately for best flavor, or store it in an airtight container in the refrigerator for up to one week.
  4. Prepare Glasses: Fill two cocktail glasses with ice if desired, or chill the glasses for serving the cocktail straight up, then set aside.
  5. Muddle Rosemary: Add fresh rosemary sprigs to a cocktail shaker and gently muddle them with a spoon to release their aromatic oils.
  6. Mix the Cocktail: Pour the watermelon juice, vodka, and fresh lemon juice into the cocktail shaker with the muddled rosemary. Add a generous handful of ice, securely attach the lid, and shake vigorously until well chilled.
  7. Strain and Garnish: Strain the cocktail mixture into the prepared glasses. Garnish each drink with a sprig of rosemary, a small watermelon slice, or a lemon twist for an elegant presentation.
  8. Serve Immediately: Serve your refreshing watermelon cocktails right away to enjoy their fresh and vibrant flavors.

Notes

  • You can compost or freeze leftover watermelon pulp to reduce waste and use it in smoothies later.
  • Adjust the amount of vodka according to your desired cocktail strength.
  • For a non-alcoholic version, substitute vodka with sparkling water or lemonade.
  • Use fresh lemon juice for the best flavor compared to bottled lemon juice.
  • Garnishing with rosemary and watermelon slices adds both aroma and visual appeal to the cocktail.
