Pastry

  • 1 batch vegan puff pastry

  • ½ cup sugar (100 grams)

Instructions

  1. Prepare surface: Sprinkle your countertop generously with sugar to prevent sticking and add sweetness to the pastry’s underside.
  2. Coat pastry: Place the vegan puff pastry on top of the sugared surface. Sprinkle sugar evenly on the top side of the dough as well.
  3. Roll pastry: Roll the puff pastry out to a rectangle approximately 9” x 15” and about ¼ inch thick, pressing the sugar into the dough as you roll.
  4. Flip and sugar again: Flip the pastry over, sprinkle sugar on both sides again, and roll gently to press sugar into the surface for extra caramelization.
  5. Trim edges: Use a sharp knife to cut the edges clean and even, shaping a perfect rectangle.
  6. Mark center: Lightly mark a faint line down the center of the dough as a guide for folding.
  7. Fold edges: Fold one edge inward, just less than a quarter of the way, then fold it over a second time.
  8. Repeat folding: Repeat the folding process on the opposite edge to create two folded edges with a small valley in the center.
  9. Fold in half: Fold the dough in half lengthwise, folding one side over the other to create a log shape. Wrap tightly in plastic wrap.
  10. Chill dough: Place the wrapped log in the freezer for 15-20 minutes to firm up for easier slicing.
  11. Prepare baking sheet: Line a baking sheet with parchment paper to prevent sticking.
  12. Trim log ends: Remove the dough from the freezer and slice off the end for a clean, flat edge.
  13. Slice palmiers: Slice the dough log into pieces just under ¼ inch thick. Arrange slices on the baking sheet, spacing them 1 ½ inches apart. Slightly open the top edge of each slice to form a ‘V’ shape and sprinkle a little extra sugar on top.
  14. Freeze before baking: Place the baking sheet with arranged palmiers in the freezer while you preheat the oven to keep their shape during baking.
  15. Preheat oven: Preheat your oven to 450°F (232°C).
  16. Bake first side: Remove the baking sheet from the freezer and place it directly into the oven, baking the palmiers for 10 minutes until lightly golden.
  17. Flip and bake second side: Carefully flip the palmiers over and bake for an additional 5-8 minutes until golden brown and caramelized.
