Ingredients

Sausage Mixture

  • 1 pound breakfast “Hot” sausage
  • ½ medium onion, diced
  • 2 jalapenos, minced

Spices

  • ½ teaspoon garlic powder
  • 1 ½ teaspoon chili powder
  • ¼ teaspoon ground cumin

Main Ingredients

  • 1 (15-ounce) can Chili
  • 8 ounces Velveeta, cut into cubes
  • 4 ounces Colby Jack cheese, shredded
  • 1 (10-ounce) can Rotel tomatoes, undrained

Instructions

  1. Brown Sausage and Vegetables: In a large skillet over medium heat, brown and crumble the hot breakfast sausage until fully cooked. Add diced onion and minced jalapenos, and continue cooking until the onion becomes soft and translucent.
  2. Add Spices and Chili: Stir in garlic powder, chili powder, ground cumin, and the canned chili. Mix thoroughly to combine all the flavors.
  3. Melt Cheeses with Tomatoes: Add the cubed Velveeta cheese, shredded Colby Jack cheese, and the undrained Rotel tomatoes to the skillet. Stir continuously over low heat until the cheeses have melted completely and the mixture is smooth and hot, ensuring the dip is evenly melted and blended.

Notes

  • For a milder dip, reduce or omit the jalapenos and use mild sausage instead of hot.
  • Serve with tortilla chips, crackers, or fresh vegetable sticks for dipping.
  • This dip can be kept warm in a slow cooker set on low for parties.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated on the stovetop or microwave.
