  • 1 tablespoon + 2 teaspoons Fresh Rosemary (finely chopped, divided)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). This temperature is ideal for roasting cashews to develop a golden, caramelized crust without burning.
  2. Mix Ingredients: In a large mixing bowl, combine the raw cashews with the melted and slightly warm coconut oil, maple syrup, brown sugar, 1/4 teaspoon of sea salt, cayenne pepper, and 1 tablespoon of the finely chopped fresh rosemary. Toss everything thoroughly to ensure the cashews are evenly coated with the flavorful mixture.
  3. Roast Cashews: Spread the coated cashews on an ungreased, unlined baking sheet pan. Roast them in the preheated oven for about 10 minutes. Halfway through roasting, stir the nuts and turn the pan to promote even cooking. Continue roasting for another 5-8 minutes, watching closely to achieve a rich, caramelized golden color without burning.
  4. Season and Cool: Immediately upon removing the nuts from the oven, sprinkle the remaining sea salt and the other 2 teaspoons of fresh rosemary over the hot cashews.
