Instructions

  1. Mash the Raspberries: In a large bowl, use a potato masher to crush the fresh raspberries until mostly reduced. Alternatively, you can lightly pulse them in a food processor without pureeing them completely, resulting in about 3 cups of crushed berries.
  2. Mix with Sugar: Add the granulated sugar to the mashed raspberries and stir well to combine. Let the mixture stand at room temperature for 10 minutes, stirring occasionally to dissolve the sugar.
  3. Prepare Pectin Mixture: In a small one-quart saucepan, combine the water and the powdered fruit pectin. Bring the mixture to a boil over medium-high heat while stirring constantly. Boil and stir for 1 full minute to activate the pectin.
  4. Combine Pectin with Berries: Pour the hot pectin mixture over the raspberry and sugar mixture. Stir constantly for 3 minutes to ensure thorough blending and even setting.
  5. Fill Containers: Immediately spoon the hot jam into freezer-safe jars or containers. Leave at least ½ inch of space at the top of each jar to accommodate expansion during freezing.
  6. Seal the Jars: Wipe the rims of the jars clean, then seal tightly with lids to prevent contamination.
  7. Set and Store: Let the sealed jars stand at room temperature for 24 hours to allow the jam to set properly. After setting, transfer the jars to the freezer for long-term storage up to 12 months, or keep them refrigerated for up to 3 weeks.
