Ingredients

Crust

  • 11 ounces box vanilla wafers
  • ½ cup (1 stick) salted butter, melted

Cream Cheese Layer

  • 8 ounces cream cheese, room temperature
  • ⅔ cup powdered sugar
  • ¼ cup sour cream, room temperature
  • 8 ounces whipped topping (1 tub)

Strawberry Gelatin Layer

  • 3 ounces box strawberry gelatin
  • ¾ cup boiling water
  • ¼ cup ice cubes
  • ½ cup heavy cream, room temperature
  • 1 ½ cups chopped fresh strawberries
  • 8 ounces whipped topping (1 tub)

Topping and Garnish

  • 8 ounces whipped topping (1 tub)
  • Fresh strawberries, optional garnish

Instructions

  1. Crush the Wafers: Place the vanilla wafers in a large food processor and crush until uniformly crumbled to form the base of the crust.
  2. Mix Crust Ingredients: Add melted butter to the crushed wafers and pulse to combine thoroughly, ensuring the crust will hold together.
  3. Press Crust: Spread the crust mixture into the bottom of a deep 9×13 inch pan and firmly press down into an even, compact layer.
  4. Prepare Cream Cheese Mixture: In a large bowl, beat cream cheese and powdered sugar together with a hand or stand mixer for 2-3 minutes until smooth and fluffy.
  5. Add Sour Cream: Mix in sour cream until the mixture becomes smooth and creamy.
  6. Fold in Whipped Topping: Carefully fold in one tub (8 ounces) of whipped topping until fully incorporated, then evenly spread this cream cheese layer over the crust.
  7. Dissolve Gelatin: In a medium bowl, whisk strawberry gelatin powder into boiling water until completely dissolved.
  8. Cool Gelatin Mixture: Add ice cubes to the gelatin and stir until fully melted to cool the mixture to room temperature before proceeding.
  9. Add Heavy Cream: Slowly mix in heavy cream to the cooled gelatin mixture, creating a creamy, semi-thick liquid base for the strawberry layer.
  10. Combine Strawberries and Whipped Topping: Fold chopped fresh strawberries and one tub (8 ounces) whipped topping into the gelatin mixture until evenly combined.
  11. Assemble Strawberry Layer: Spread the strawberry gelatin mixture evenly over the cream cheese layer; although slightly runny, it will set firmly in the refrigerator.
  12. Chill: Cover the pan with plastic wrap and refrigerate for 4 to 6 hours to allow layers to firm up and flavors to meld.
  13. Final Topping and Serve: Before serving, remove plastic wrap, spread the last tub (8 ounces) of whipped topping over the strawberry layer, garnish with fresh strawberries if desired, and cut into squares for serving.

Notes

  • This dessert requires at least 4 hours of refrigeration; overnight chilling yields the best texture.
  • Ensure all dairy ingredients are at room temperature for smooth blending.
  • Use fresh strawberries for the best flavor and texture in the strawberry layer and garnish.
  • If preferred, substitute whipped topping with freshly whipped heavy cream for a lighter, fresher taste.
  • Keep the lasagna covered during chilling to prevent it from absorbing fridge odors.
