Instructions

  3. Puree with herbs and garlic: Return the combined mixture to the food processor. Add minced garlic and fresh thyme, then pulse until the mixture is mostly puréed but still has small chunks to maintain a pleasant texture.
  4. Season and chill: Transfer the puréed mixture back to the bowl. Stir in olive oil, balsamic vinegar, salt, and pepper to taste. Cover the bowl and refrigerate the gazpacho for at least four hours to allow flavors to meld and soup to chill.
