Ingredients

Dough

  • 1 – 1 1/4 pounds all purpose refrigerator dough (~600 grams)

Garlic Butter Topping

  • 2-3 tablespoons butter, melted (use vegan butter for vegan option)
  • 1/2 – 1 teaspoon garlic granules or 1 large clove, minced
  • 1/2 teaspoon salt, sea salt or flaky salt (to taste)

Optional Toppings

  • 1-2 tablespoons parmesan cheese (omit or use vegan parmesan for vegan version)
  • 1 teaspoon Italian dry herbs (oregano, basil, parsley)
  • fresh parsley, basil, rosemary, or thyme, chopped
  • sesame seeds

Instructions

  1. Prepare Baking Sheet: Line a large baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. Shape the Dough: Take 1 to 1 1/4 pounds of all-purpose refrigerator dough and shape it into a ball on a lightly floured surface.
  3. Portion Dough: Using a bench scraper or knife, cut the dough into 9 to 12 equal portions, each weighing about 60-70 grams.
  4. Form Breadsticks: Roll each portion into a log approximately 7-8 inches long. If the dough resists and springs back, let it rest a few minutes to relax the gluten. Use a little flour on your hands as needed to prevent sticking.
  5. Arrange and Proof: Place the breadsticks on the prepared baking sheet with about 1 inch of space between each. Cover tightly with plastic wrap and a towel, then let rise in a warm spot until puffy, about 20 minutes depending on kitchen temperature.
  6. Preheat Oven: Preheat your oven to 450ºF with the rack in the center position. If your oven runs hot, reduce temperature to 425ºF.
  7. Make Garlic Butter: Melt the butter and stir in the garlic granules or minced garlic along with the salt.
  8. Brush and Add Seeds: Gently brush the garlic butter over the tops of the risen breadsticks. If using sesame seeds, sprinkle them on now so they stick to the butter.
  9. Bake: Bake the breadsticks for 12-15 minutes until they turn light to medium golden brown. For a darker crust, broil them for the last minute while watching carefully to avoid burning.
  10. Finish and Serve: Remove breadsticks from the oven and immediately brush with more melted garlic butter. Sprinkle with optional parmesan cheese, a pinch of sea salt, and Italian herbs if desired. Garnish with fresh chopped herbs before serving.
