Instructions

  1. Prepare greens: Chop off the tough ends of the turnip green stems and discard. Bundle the greens and cut into roughly 1-inch sections.
  2. Clean greens: Place chopped greens in a large basin or clean deep sink. Cover with water and toss to remove dirt and grit. Drain and repeat 3-5 times until water runs clear and greens are clean.
  3. Cook bacon: Dice bacon into 1-inch pieces. In a Dutch oven or large saucepan over medium heat, cook bacon until crispy and fat has rendered. Remove bacon pieces and set aside on a plate.
  4. Sauté aromatics and turnips: Add onion, minced garlic, and cubed turnips to the bacon fat. Sauté for 2-3 minutes until onion turns translucent and garlic is fragrant.
  5. Add greens and seasonings: Gradually add turnip greens handful by handful, allowing each batch to wilt before adding more. Stir in Creole seasoning, brown sugar, red pepper flakes, beef broth, white wine vinegar, and reserved bacon bits. Season with salt and black pepper. Stir well to combine.
  6. Simmer: Bring the mixture to a boil, then reduce heat and simmer uncovered for 30-45 minutes until the greens are tender. Add additional water or broth as necessary to maintain moisture.
  7. Serve: Transfer greens along with some cooking liquid to a serving bowl. Enjoy warm as a flavorful side or main dish.
