Instructions

  1. Preheat Broiler: Set your oven to the high broiler setting and position the oven rack on the top rung. Line a baking sheet with foil to make cleanup easier.
  2. Broil Ingredients: Arrange the tomatillos, whole garlic cloves, onion slices, and pineapple on the prepared baking sheet. Place the sheet under the broiler and cook for 10 minutes, allowing the edges to start charring.
  3. Flip and Broil Again: Carefully remove the baking sheet, flip all the ingredients over to expose the other side, then return it to the broiler. Broil for an additional 5 minutes, watching closely to prevent burning, until the ingredients are gently charred.
  4. Blend Salsa: Transfer the roasted ingredients to a high-speed blender or food processor. Add the chipotle peppers in adobo. Pulse or blend briefly on high speed until the salsa reaches a chunky texture, being careful not to overblend.
  5. Season and Serve: Taste the salsa and add kosher salt as needed. Stir to combine, then serve immediately or refrigerate for later use.
