Ingredients

Wet Ingredients

  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1/4 cup orange juice
  • Zest of 1 large orange, finely grated

Dry Ingredients

  • 2 cups all purpose flour
  • 1 tsp ground cardamom (use 1 1/2 teaspoons for a more pronounced cardamom flavor)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Topping

  • 3 tbsp sparkling sugar (or regular sugar)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Butter a muffin tin or line it with muffin liners to prevent sticking.
  2. Combine Wet Ingredients: In a bowl, whisk together the sugar, eggs, vegetable oil, milk, orange juice, and finely grated orange zest until the mixture is smooth and well blended.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, ground cardamom, baking powder, baking soda, and salt to combine evenly.
  4. Combine Wet and Dry: Add the dry ingredients to the wet ingredients and gently fold together just until there are no visible streaks of flour. Avoid overmixing to keep the muffins tender.
  5. Fill Muffin Tin and Add Topping: Spoon the batter evenly into the prepared muffin tin cups. Sprinkle the tops with sparkling sugar for a sweet, crunchy finish.
  6. Bake: Bake the muffins in the preheated oven for 20-22 minutes. They should be risen and golden brown around the edges. Test doneness by inserting a toothpick into the center—it should come out clean with no wet batter.
  7. Cool and Serve: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.

Notes

  • If you prefer a stronger cardamom flavor, increase the ground cardamom to 1 1/2 teaspoons.
  • Sparking sugar on top can be substituted with regular sugar but will not provide the same crunch or sparkle.
  • You can substitute milk with any plant-based milk for a dairy-free version.
  • Ensure not to overmix the batter as this can make the muffins tough.
  • Use fresh orange zest for the best bright citrus flavor.
