Ingredients

Main Ingredients

  • 8 oz. block of cream cheese (softened to room temperature)
  • ⅓ cup sugar
  • 1 tsp vanilla extract
  • 2/3 cup graham cracker crumbs

Coating Options

  • Sprinkles
  • Additional graham cracker crumbs
  • 12 oz. melting chocolate
  • 1 tsp canola oil (to melt with the chocolate)

Instructions

  1. Prepare the Cheesecake Mixture: In a medium bowl, use an electric mixer to beat the cream cheese, sugar, and vanilla extract until the mixture is smooth and creamy. Gently fold in the graham cracker crumbs until fully combined. Place the mixture in the freezer for about 30 minutes to firm up, making it easier to roll into balls.
  2. Shape the Balls: Lightly grease your hands with cooking spray to prevent sticking. Roll the chilled mixture into small, bite-sized balls. You may need to reapply the spray to your hands during rolling as the mixture can be sticky.
  3. Coat the Cheesecake Balls: Roll the formed balls in sprinkles, pressing gently so they adhere well. Alternatively, you can roll them in more graham cracker crumbs or coat each ball with melted chocolate. To melt the chocolate, warm 12 oz. of melting chocolate with 1 teaspoon of canola oil until smooth, then dip each ball and optionally add sprinkles on top before the coating sets.
  4. Chill to Set: Place the coated cheesecake balls in a sealed container and chill them in the refrigerator for at least 4 hours to firm up the texture. They can be eaten immediately if desired, but chilling improves firmness and flavor. Store chilled for up to 5 days or freeze for up to 3 months for longer storage.

Notes

  • Using room temperature cream cheese ensures a smooth mixture.
  • Freezing the mixture before rolling prevents it from sticking to your hands.
  • Can substitute melted white chocolate or colored candy melts for variety.
  • Store cheesecake balls in a sealed container to maintain freshness.
