Ingredients

Base Ingredients

  • 8 cups corn Chex cereal

Coating Mixture

  • 1/2 cup creamy peanut butter
  • 1 cup chocolate chips (milk or semisweet, recommended Guittard or Ghirardelli)
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Dusting & Add-ins

  • 1-1/2 cups powdered sugar
  • Miniature M&M’s (optional)
  • Mini chocolate chips (optional)

Instructions

  1. Measure Cereal: Pour 8 cups of corn Chex cereal into a large bowl and set it aside, ensuring it stays intact and not crushed.
  2. Combine Coating Ingredients: In a large microwave-safe bowl, combine 1/2 cup creamy peanut butter, 1 cup chocolate chips, 4 tablespoons unsalted butter, and 1/2 teaspoon salt. Microwave the mixture in bursts of 15 seconds, stirring for 15 seconds between each burst, until the mixture is fully melted and smooth. Mix in 1 teaspoon vanilla extract thoroughly.
  3. Coat Cereal: Pour the melted chocolate-peanut butter mixture over the corn Chex cereal. Gently stir to coat the cereal evenly, taking care not to crush the pieces while mixing.
  4. Powder Sugar Coating: Divide the coated cereal mixture into two equal portions. Place each half into a separate gallon-sized resealable plastic bag, add half of the 1-1/2 cups powdered sugar to each bag, seal, and shake vigorously until the cereal is evenly coated with powdered sugar.
  5. Mix and Add Extras: Pour the coated Muddy Buddies into a large bowl. If desired, fold in miniature M&M’s or mini chocolate chips for added flavor and texture.
  6. Serve: Enjoy immediately or store in an airtight container to maintain freshness.

Notes

  • Take care when stirring the cereal after pouring the melted mixture to avoid crushing the Chex pieces.
  • Use microwave-safe bowls for melting the chocolate and peanut butter mixture safely.
  • You can substitute milk or semisweet chocolate chips depending on your preference.
  • For variation, try adding nuts or different types of candy mix-ins.
  • Store Muddy Buddies in an airtight container to keep them fresh for up to one week.
