Ingredients

Lamb Kebabs

Yogurt Sauce

Instructions

  1. Prepare the Lamb: Cut the lamb into 1-inch pieces, trimming off any visible fat. Place the pieces in a large mixing bowl.
  2. Marinate: Add extra virgin olive oil, crushed garlic, sea salt, and Moroccan inspired spice blend to the lamb pieces. Toss to coat thoroughly. Cover the bowl and refrigerate for 15-30 minutes to enhance flavor.
  3. Preheat the Grill: Heat your grill to medium-high. Brush the grill grates lightly with oil to prevent sticking.
  4. Assemble Kebabs: Thread the marinated lamb pieces onto skewers, alternating with chunks of red onion. If using wooden or bamboo skewers, soak them in water beforehand to prevent burning.
  5. Grill the Kebabs: Place the assembled skewers in a single layer over the heated grill. Grill for about 8 minutes total, turning every few minutes, until the lamb is browned and cooked to your preference. Eight minutes usually yields medium-rare lamb.
