Ingredients

Base Ingredients

  • 2 cups rolled or quick oats (approx. 240g)
  • 1 cup plain yogurt (thick natural or Greek-style; soy yogurt used; approx. 250g)
  • 1 cup mango (diced, frozen or fresh; approx. 170g)
  • 1 small banana (ripe; approx. 100g)
  • ½ cup milk (any plant-based milk; approx. 125ml)
  • ⅛ tsp salt

For Serving

  • 1 cup mango (diced, frozen or fresh; approx. 170g)

Optional Topping

  • 80 g white chocolate (melted; approx. 2.8 oz)
  • ½ tbsp coconut oil (helps thin chocolate; approx. 7g)

Instructions

  1. Blend the base mixture: Add the oats, yogurt, 1 cup diced mango, banana, milk, and salt to a blender. Blend until smooth and thick, achieving a pourable batter consistency.
  2. Prepare the jars: Divide the remaining 1 cup diced mango evenly between four jars or containers as the fruit base.
  3. Assemble the oats: Pour the blended oat mixture evenly over the mango in each jar and gently smooth the tops for an even finish.
  4. Prepare the optional topping: If using, stir the melted white chocolate with coconut oil until smooth and pour over the oat mixture in each jar to form a thin chocolate shell.
  5. Chill and set: Seal the jars or containers with lids and refrigerate for at least 1½ hours, preferably overnight, until the oats are thoroughly chilled and set.

Notes

  • You can use either rolled or quick oats depending on your texture preference; rolled oats provide a slightly thicker consistency.
  • For dairy-free options, plant-based yogurts and milks such as soy, almond, or oat milk work well.
  • The white chocolate topping is optional but adds a delicious creamy sweetness and texture contrast.
  • Overnight chilling allows the oats to absorb the liquid fully, creating a creamy and smooth texture without cooking.
  • For best results, blend until the mixture is pourable but still thick to ensure the oats soak up the liquid properly.
