Instructions

  1. Prepare the Marinade: In a large bowl, whisk together 1/4 cup olive oil, 2 tablespoons lemon juice, 1 teaspoon lemon zest, minced garlic, chopped parsley, Italian seasoning, sea salt, and black pepper to create the flavorful marinade base.
  2. Marinate the Chicken: Add the chicken breasts or thighs to the marinade, turning them to coat evenly. Cover and refrigerate for at least 1 hour, allowing the flavors to infuse the meat. You can marinate up to 24 hours for even more intense flavor.
  3. Cook on Stovetop: Heat 1 tablespoon of olive oil in a large cast iron skillet over medium heat until shimmering. Optionally, top each piece with a thin lemon slice for extra freshness. Bake for 16 to 22 minutes until the chicken is firm and reaches an internal temperature of 162-165°F (72-74°C).
