Instructions

  1. Rinse the ribs: Rinse the beef short ribs thoroughly in cold water to remove any loose bone fragments and sediment. Drain them well and set aside to ensure a clean, fresh base for marinating.
  2. Prepare the marinade base: In a blender or food processor, combine the Korean pear, onion, garlic cloves, ginger, and water. Blend until the mixture forms a smooth pulp. For a smoother marinade, strain this mixture through a fine mesh strainer or cheesecloth to extract the juice, discarding the pulp.
  3. Mix the marinade: Pour the strained juice into a large mixing bowl. Add low sodium soy sauce, brown sugar, mirin, sesame oil, and black pepper. Stir well to combine all the flavors and create a balanced marinade.
  4. Marinate the ribs: Place the drained short ribs into the large mixing bowl with the marinade, ensuring all pieces are coated thoroughly. Cover and refrigerate for at least 6 hours, preferably overnight, to allow the flavors to deeply penetrate the meat.
