Ingredients

Cheese Base

  • 1 cup Raw Cashews (150g)
  • 1/3 cup Water (80ml)
  • 5 Tbsp Freshly Squeezed Lemon Juice
  • 2 Tbsp Coconut Oil
  • 1/4 cup Tahini (60g)
  • 1/2 Medium Raw Carrot (~30g, peeled and sliced)
  • 2 1/2 tsp Salt
  • 1/4 tsp Paprika
  • 1/8 tsp Cayenne Pepper
  • 1 Tbsp Dijon Mustard
  • 1/4 cup Nutritional Yeast
  • 1 tsp Garlic Powder (or flakes)

Agar Agar Mixture

  • 1 cup Water (240ml)
  • 1 Tbsp Agar Agar Powder (must be powder and not flakes)

Instructions

  1. Blend Cheese Ingredients: Add the cashews, 1/3 cup water, lemon juice, coconut oil, tahini, peeled and sliced carrot, salt, paprika, cayenne pepper, Dijon mustard, nutritional yeast, and garlic powder to a blender. Blend until the mixture is very smooth. Keep the blended mix in the blender and set aside.
  2. Prepare Agar Agar Mixture: In a saucepan, combine 1 cup water and agar agar powder. Heat the mixture, stirring regularly until it reaches a boil. Once boiling, continue to boil for exactly 1 minute, stirring frequently to ensure the agar agar dissolves properly. Remove from heat.
  3. Combine Agar Agar with Cheese Blend: Immediately pour the hot agar agar mixture into the blender containing the cheese blend. Blend again until smooth to incorporate.
  4. Set the Cheese: Quickly pour the blended mixture into a round dish lightly sprayed with non-stick spray. Act fast as the mixture will begin to set rapidly.
  5. Refrigerate and Firm Up: Place the dish in the refrigerator until the cheese is fully set and firm, which usually takes a few hours. Once set, turn the dish upside down onto a plate to remove the cheese block, ready for slicing and serving.

  • Use agar agar powder, not flakes, to ensure proper setting.
  • The carrot adds natural sweetness and helps with firmness; do not omit for best texture.
  • Refrigerate for at least 2-4 hours or overnight for a firmer texture.
