Ingredients

Beef and Seasoning

  • 1 pound ground beef
  • 1 packet taco seasoning (1.3 ounce packet, about 4 tablespoons)
  • 1/3 cup water
  • 1 tablespoon tomato paste

Vegetables and Sauté

  • 2 red bell peppers, sliced
  • 1 red onion, sliced
  • 1 tablespoon olive oil
  • 1 1/2 cups corn (fresh, canned drained, or frozen)

Base and Toppings

  • 2 cups cooked white rice (can substitute cauliflower rice)
  • 2 cups chopped romaine lettuce
  • 1 avocado, sliced
  • 1 batch cilantro lime crema (see recipe link)

Instructions

  1. Heat Skillet: Warm a large skillet over medium heat to prepare for cooking the beef.
  2. Sauté Beef: Add the ground beef to the hot skillet and cook, stirring occasionally, until fully browned and no longer pink throughout.
  3. Add Tomato Paste: Stir in the tomato paste into the cooked beef and sauté for an additional 1 minute to enhance the flavor.
  4. Season Beef: Mix in the taco seasoning packet along with 1/3 cup water. Reduce the heat to low and let the mixture simmer for a few minutes, allowing the flavors to meld together.
  5. Prepare Vegetables: In a separate skillet, heat the olive oil over medium heat.
  6. Sauté Peppers and Onions: Add the sliced bell peppers and onions to the skillet, cooking until softened and slightly caramelized, about 5-7 minutes.
  7. Assemble Bowls: Start with a base of cooked white rice in each bowl (cauliflower rice can be used as a low-carb alternative). Add a layer of chopped romaine lettuce, then spoon on the seasoned ground beef, sautéed peppers and onions, corn, and sliced avocado. Finish each bowl with a generous dollop of cilantro lime crema. Serve immediately and enjoy!

Notes

  • For a lower-carb version, substitute cooked cauliflower rice for white rice.
  • Use fresh or frozen corn as preferred; canned corn should be drained before adding.
  • The cilantro lime crema adds a bright, creamy finish but can be substituted with sour cream or Greek yogurt if preferred.
  • Adjust the amount of taco seasoning to taste, especially if you prefer milder or spicier flavors.
  • Leftover components can be stored separately to maintain freshness when reheating.
