Instructions

  1. Prepare the rice mixture: In a bowl, break apart the cooked day-old rice using your hands to separate the grains evenly. Mix the rice thoroughly with the egg yolks, ground turmeric, chicken bouillon, sesame oil, white pepper powder, and Kosher salt. Set this mixture aside to allow the flavors to meld.
  2. Cook the protein: Heat a large wok or skillet over high heat until very hot. Drizzle in a generous amount of vegetable oil. Add the sliced Chinese cured sausage (or your choice of protein) and stir-fry until it is cooked through and slightly caramelized. Remove the sausage from the wok or push it to the side to make room for the next step.
  3. Sauté scallions and rice: Add more vegetable oil to the pan if needed. Stir in the sliced white parts of the scallions and cook briefly for about 10 seconds to release their aroma.
