Ingredients

Seasonings

  • ¾ teaspoon dried basil
  • ¾ teaspoon dried oregano
  • ¾ teaspoon dried parsley
  • ¾ teaspoon mustard powder
  • ¼ teaspoon dried thyme
  • ¼ teaspoon onion powder
  • ¼ teaspoon pepper

Main Ingredients

  • 4 tablespoons butter, divided
  • 4 cloves fresh garlic, minced
  • 2 ¾ cups chicken broth
  • ¾ cup half and half
  • 1 teaspoon soy sauce
  • ½ chicken bouillon cube
  • ¾ cup Parmesan cheese, freshly grated
  • 2 tablespoons fresh lemon juice
  • ½ lb. shellbow pasta

Instructions

  1. Prepare seasonings and ingredients: Combine all the dried herbs and spices in a small bowl and set aside. Measure out all remaining ingredients to have everything ready since the cooking process moves quickly.
  2. Sauté garlic and seasonings: In a soup pot over medium heat, melt 3 tablespoons of butter. Add the minced garlic and the mixed seasonings. Stir continuously until the butter begins to foam and the garlic is fragrant, taking care not to burn it.
  3. Add liquids: Pour in the chicken broth, half and half, soy sauce, and crumble in the chicken bouillon cube. Stir to combine all ingredients evenly.
  4. Cook the pasta: Bring the mixture to a boil. Add the shellbow pasta and return to a gentle boil. Cook uncovered following the package instructions, usually about 8-10 minutes. Throughout cooking, use a silicone spatula to stir and scrape the bottom of the pot to prevent the pasta from sticking or settling. Taste the pasta to ensure it’s cooked to your preferred tenderness.
  5. Incorporate cheese and lemon: Lower the heat to low and gradually stir in the freshly grated Parmesan cheese until melted and fully integrated. Remove the pot from heat and stir in the fresh lemon juice to add brightness to the dish.
  6. Finish with butter: Add the remaining 1 tablespoon of butter to the pot. Cover the pot for a few minutes to allow the butter to melt, then gently stir it into the pasta before serving to enhance richness and flavor.

Notes

  • Use shellbow pasta or any short pasta such as rotini or penne if unavailable.
  • Stirring continuously while cooking pasta prevents sticking and ensures even cooking.
  • For a vegetarian version, substitute chicken broth and bouillon with vegetable broth.
  • Freshly grated Parmesan cheese is preferred for best melting and flavor.
  • Adjust lemon juice amount to taste for desired brightness.
