Ingredients

Gelatin Mix

  • 2 teaspoons unflavored gelatin powder (1 envelope)

Matcha Milk Base

  • 2 cups oat milk
  • ¼ cup organic cane sugar (or any white sugar)
  • 2 tablespoons matcha powder (plus more for dusting)

Instructions

  1. Bloom the Gelatin: In a microwavable cup, combine the gelatin powder and ¼ cup oat milk. Whisk immediately with a fork until well mixed, then let it sit for 5 minutes to absorb the liquid and become spongy.
  2. Warm the Milk and Sugar: In a saucepan, gently warm 2 cups oat milk with the cane sugar, stirring continuously until the sugar dissolves completely. Ensure the mixture does not boil.
  3. Prepare Matcha Mixture: Sift 2 tablespoons of matcha powder into a small bowl. Remove 4 tablespoons of the warm milk-sugar mix and whisk it into the matcha powder using a bamboo whisk or fork until smooth and lump-free.
  4. Combine Matcha and Milk: Stir the matcha mixture back into the warm milk-sugar blend, mixing thoroughly to create a consistent matcha milk base.
  5. Dissolve the Gelatin: Microwave the gelatin and oat milk mixture in 20-second intervals, stirring between each, until the gelatin completely dissolves. Alternatively, melt it in a double boiler over gentle heat, stirring constantly without boiling.
  6. Incorporate Gelatin: Pour the dissolved gelatin mixture into the matcha milk base and stir well to ensure even distribution.
  7. Chill the Pudding: Pour the combined mixture into individual cups and refrigerate for at least 4 hours until fully set.
