Ingredients

Dressing

  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/2 cup ketchup
  • 2-3 tablespoons honey
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder

Salad

  • 1 pound ground beef or ground turkey
  • 3 tablespoons taco seasoning or 1 packet of taco seasoning
  • 3/4 cup water
  • 1 large head iceberg lettuce or romaine lettuce, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 cup chopped black olives
  • 1 cup halved grape or cherry tomatoes
  • 1 can (15.25 ounces) corn, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup shredded cheddar cheese or Monterey Jack cheese
  • 2 cups crushed nacho cheese Doritos

Instructions

  1. Prepare the Dressing: In a mason jar, combine the red wine vinegar, olive oil, ketchup, honey, Worcestershire Sauce, paprika, onion powder, and garlic powder. Seal the jar and shake well until all ingredients are thoroughly mixed. Cover and refrigerate the dressing until ready to use to enhance its flavors.
  2. Cook the Ground Meat: Heat a large skillet over medium-high heat and add the ground beef or turkey. Cook, breaking it apart with a spoon until browned completely. Drain any excess grease from the skillet. Stir in the taco seasoning and water, then reduce the heat and let it simmer for 5 to 7 minutes to allow the flavors to meld. Remove from heat and let the meat mixture cool for 10 to 15 minutes.
  3. Assemble the Salad Base: In a large bowl, combine the chopped iceberg or romaine lettuce. Layer on the green bell pepper, black olives, halved grape or cherry tomatoes, drained corn, rinsed black beans, shredded cheese, and the cooled seasoned meat mixture evenly across the top.
  4. Add Doritos and Dressing: Right before serving, sprinkle the crushed nacho cheese Doritos over the salad. Drizzle the desired amount of the prepared dressing on top and toss gently to coat all ingredients evenly. Serve immediately for the best crunchiness of the Doritos.
