Ingredients

Fish and Seasoning

  • 1 pound cod, cut into 5-6 inch fillets, about 1 inch thick
  • 2 tsp kosher salt, divided
  • 1 tsp black pepper, divided

Breading Mix

  • 1 ½ cups panko breadcrumbs
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Italian seasoning

Wet Batter

  • 1 large egg
  • 2 tablespoons all-purpose flour
  • 2 tablespoons water

Additional

  • Neutral oil spray (for air frying)

Instructions

  1. Season the Cod: Season the cod fillets with half of the kosher salt and black pepper. Let the seasoned fish sit aside while you prepare the breading and the wet batter to allow the flavors to penetrate the fish.
  2. Prepare the Breading and Batter: In a plate, combine the panko breadcrumbs, smoked paprika, garlic powder, onion powder, Italian seasoning, and the remaining salt and pepper. Mix thoroughly to ensure the seasoning is evenly distributed. In a separate bowl, whisk together the egg, all-purpose flour, and water until the batter is smooth and resembles a loose pancake batter.
  3. Coat the Fish: Pat the cod fillets dry with paper towels to remove excess moisture. Dip each fillet into the wet batter, allowing any excess to drip off. Then press each fillet into the panko breadcrumb mixture, making sure it’s coated on all sides. Repeat this process until all fillets are breaded.
  4. Air Fry the Fish: Place the coated fillets in a single layer inside the air fryer basket, making sure they don’t overlap for even cooking. Spray the tops lightly with neutral oil spray. Air fry at 400°F for 7 minutes.
  5. Flip and Finish Cooking: After 7 minutes, carefully flip the fillets, spray the tops again with the oil spray, and air fry for an additional 4-5 minutes. The fish is done when the internal temperature reaches 145°F and the crust is crispy and golden brown. Serve immediately.

Notes

  • Patting the fish dry before battering is crucial to help the coating stick better.
  • Use a neutral oil spray like canola or avocado oil for a light coating without overpowering flavors.
  • Make sure to space the fillets in the air fryer basket to allow hot air to circulate for even crisping.
  • Check the internal temperature with a meat thermometer to ensure food safety.
  • For a gluten-free version, substitute the all-purpose flour and panko with gluten-free alternatives.
