Ingredients

Spices

  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Cayenne pepper, to taste (optional)

Main Ingredients

  • 4 thin-sliced chicken breasts
  • 4 tablespoons butter, divided
  • 1 cup heavy cream
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Mix spices: In a small bowl, combine salt, chili powder, onion powder, garlic powder, paprika, and cayenne pepper (if using). Mix thoroughly.
  2. Season chicken: Sprinkle half of the spice mixture evenly on both sides of the chicken breasts, reserving the remaining spices for later use.
  3. Cook chicken: Heat 2 tablespoons of butter in a large skillet over medium heat. Add the seasoned chicken breasts and cook for about 5 minutes per side, or until the chicken is golden brown and cooked through.
  4. Thicken sauce: Remove the chicken from the skillet and set aside. To the same skillet, add the heavy cream, remaining 2 tablespoons of butter, and the reserved spice mix. Whisk continuously over medium heat until the sauce starts to thicken, approximately 2 minutes.
  5. Coat chicken: Return the cooked chicken breasts to the skillet. Toss and coat evenly with the creamy sauce. Allow to heat through for 1 minute to absorb flavors.
  6. Garnish and serve: Plate the chicken with a generous spoonful of the sauce. Garnish with freshly chopped parsley. Optionally, serve with pasta, mashed potatoes, or a side salad.

Notes

  • For more heat, increase the amount of cayenne pepper or add a pinch of red pepper flakes.
  • Use thin-sliced chicken breasts to ensure quick and even cooking.
  • Heavy cream can be substituted with half-and-half for a lighter sauce, though it will be less rich.
  • Fresh parsley adds a nice color contrast and fresh flavor, but you can also use chopped chives or cilantro.
  • Serve over your favorite starch such as pasta, rice, or mashed potatoes for a complete meal.
