Ingredients

Instructions

  2. Sauté vegetables: Heat the sun dried tomato oil in a non-stick skillet over medium heat. Add the diced sun-dried tomatoes and baby spinach. Cook while stirring for 2-3 minutes until the spinach is just wilted. Transfer the mixture to a plate and set aside.
  3. Cook the egg whites: Spray the skillet with nonstick cooking spray and pour in the egg whites. Scramble them gently using a rubber spatula and cook for about 2 minutes, until just set. Transfer the scrambled egg whites to a plate and set aside.
