Ingredients

Apricot Mixture

  • 200 g dried apricots (plus a single dried apricot cut into thin slivers for garnish)
  • 100 g blanched almonds (or cashews, or a mix of the two)
  • 150 ml boiling water

Chocolate Coating

  • 100 g dark chocolate (bittersweet)

Instructions

  1. Soak Apricots and Nuts: Place the dried apricots and almonds in a heat-resistant bowl. Pour the boiling water over them, stir, and let soak for 5 minutes. Drain off the water after soaking.
  2. Make Paste: Transfer the soaked apricots and nuts into a blender. Blitz until they form a thick, sticky paste that holds together.
  3. Form Balls: Take a tablespoon of the apricot-nut mixture and roll it into a ball. Repeat to make about 12 balls total, each weighing approximately 27g (1 ounce).
  4. Melt Chocolate: Melt the dark chocolate in a small heat-resistant bowl either by microwaving in short bursts or using a bain-marie (double boiler) method.
  5. Coat Balls with Chocolate: Using a fork or slotted spoon, gently lower each apricot ball into the melted chocolate. Roll it around to coat thoroughly, then lift and let excess chocolate drip off.
  6. Set Balls to Chill: Place the coated balls onto a baking tray lined with greaseproof paper. Repeat the coating process for all balls.
  7. Garnish and Set: Top each chocolate-coated ball with a thin sliver of dried apricot. Allow the chocolate to set completely before serving.
