Ingredients

Chicken

  • 3 medium boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • Salt and ground black pepper, to season

Casserole Sauce

  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup sour cream
  • 2/3 cup 2% milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Other Ingredients

  • 2 cans (14.5 ounces each) green beans, drained
  • 2 cups shredded cheddar cheese (divided)
  • 6 ounces French Fried onions

Instructions

  1. Cook the Chicken: Heat 1 tablespoon olive oil in a large skillet over medium heat. Season the cubed chicken with salt and pepper. Cook for 6 to 8 minutes, stirring occasionally, until the chicken is golden brown and fully cooked through. Remove from heat and set aside.
  2. Preheat Oven and Prepare Dish: Preheat the oven to 375°F (190°C). Spray a 9×13-inch baking dish lightly with cooking spray to prevent sticking.
  3. Make the Sauce: In a large bowl, combine the cream of mushroom soup, sour cream, and 2% milk, mixing until smooth. Add garlic powder, onion powder, salt, and ground black pepper to the mixture and stir well to incorporate all the spices.
  4. Combine Ingredients: Fold the cooked chicken cubes, drained green beans, and 1 cup of shredded cheddar cheese into the sauce mixture until evenly mixed.
  5. Assemble the Casserole: Transfer the mixture to the prepared baking dish. Evenly spread the remaining 1 cup of shredded cheddar cheese on top, then sprinkle the 6 ounces of French fried onions over the cheese layer.
  6. Bake: Place the casserole in the preheated oven and bake for 20 minutes, or until heated through and the cheese on top is melted and bubbly.

Notes

  • For extra flavor, add a teaspoon of Worcestershire sauce or a dash of smoked paprika to the sauce mixture.
  • Ensure the green beans are well drained to avoid a watery casserole.
  • Use freshly grated cheddar cheese for better melting and taste.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated in the oven.
  • To make this dish low sodium, use low-sodium soup and reduce added salt accordingly.
