Ingredients

For the Tacos

  • 8 medium flour tortillas
  • 1 pound ground chicken
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil (divided)
  • ½ cup panko bread crumbs

For the Caesar Salad Topping

  • ½ cup Caesar dressing
  • 2 romaine lettuce hearts (or 1 large head romaine lettuce, chopped)
  • 1 cup grated parmesan cheese

Instructions

  1. Prepare the chicken on tortillas: Divide the ground chicken into 8 equal portions and press each portion as a thin, even layer onto one side of each flour tortilla, spreading close to the edges to cover the surface uniformly.
  2. Season the chicken: Evenly sprinkle smoked paprika, garlic powder, kosher salt, and ground black pepper over the chicken layer directly on each tortilla, ensuring good coverage for flavor.
  3. Heat the skillet: Preheat a large skillet over medium to medium-high heat until it is hot enough to sear the chicken properly.
  4. Cook chicken side down: Add 1 tablespoon of olive oil to the skillet, then carefully place the tortillas chicken side down in the pan. Cook for 2 to 3 minutes, until the chicken is fully cooked through and has a well-browned crust.
  5. Cook the tortilla side: Flip each tortilla and cook the tortilla side for about 30 seconds until it becomes lightly crisped. Remove the tortillas from the pan and set aside.
  6. Toast the panko breadcrumbs: Add the remaining tablespoon of olive oil to the skillet. Stir in the panko breadcrumbs and toast them constantly, stirring until they turn golden brown and crispy. Remove from heat.
  7. Prepare the Caesar salad: Toss the chopped romaine lettuce with the Caesar dressing until the leaves are evenly coated.
  8. Assemble the tacos: Top each chicken-covered tortilla with a generous helping of Caesar salad, then sprinkle with the toasted breadcrumbs and grated parmesan cheese. Fold the tortillas and serve immediately for best texture and flavor.

Notes

  • For extra crispiness, ensure the skillet is well heated before adding the chicken tortillas.
  • You can substitute ground turkey for chicken if preferred.
  • Use freshly grated parmesan cheese for the best taste and texture.
  • To make this recipe gluten free, substitute the flour tortillas and panko breadcrumbs with gluten-free versions.
  • Serve immediately as the toasted panko and lettuce may soften if left standing too long.
