Instructions

  4. Prepare Potatoes: While the onions caramelize, wash the Yukon Gold potatoes thoroughly and chop into small chunks. Keeping the skin on adds texture and fiber, but peeling is optional.
  5. Boil Potatoes: In a large pot, bring water to a rolling boil on the stove. Add the chopped potatoes and cook for about 20 minutes until they are fork tender and soft.
