Ingredients

Strawberries

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) and prepare a 9×13 inch baking dish by arranging the frozen strawberries in a single layer to ensure even roasting.
  2. Mix balsamic and honey: In a small bowl, whisk together the balsamic vinegar and honey until combined. Pour this mixture over the strawberries and toss gently to coat each berry well.
  3. Roast the strawberries: Place the baking dish in the preheated oven and roast the strawberries for 35-45 minutes, tossing occasionally. Roast until the berries are softened and have released their juices, enhancing their sweet and tangy flavor.
  4. Cool and chill the strawberries: Remove the roasted strawberries from the oven and let them cool for 5 to 10 minutes. Transfer the berries along with their juices to a container and refrigerate until chilled, allowing the liquid to thicken.
  5. Prepare the whipped feta: In a food processor bowl fitted with a blade, combine feta cheese, Greek yogurt, lemon juice, kosher salt, and black pepper. Blend on high speed. While blending, slowly drizzle in olive oil until the mixture is smooth and creamy.
