Ingredients

Chicken

  • 4 boneless, skinless chicken breasts
  • Cooking spray

Glaze & Seasoning

  • ¼ to ½ cup raspberry jam (adjust to taste)
  • ¼ cup balsamic vinegar
  • 3 tablespoons Dijon or yellow mustard
  • 2 tablespoons orange juice
  • ¼ cup shallots or red onion, diced
  • 2 tablespoons garlic, minced
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line a 13×9-inch baking pan with tinfoil and lightly coat it with cooking spray to prevent sticking.
  2. Arrange chicken: Place the boneless, skinless chicken breasts evenly spaced inside the prepared baking pan and set aside.
  3. Make glaze mixture: In a medium bowl, combine the raspberry jam, balsamic vinegar, orange juice, Dijon mustard, salt, pepper, dried sage, dried thyme, minced shallots or red onion, and minced garlic. Mix well to create a flavorful glaze.
  4. First bake with cover: Pour the jam glaze evenly over the chicken breasts to coat them thoroughly. Cover the pan tightly with tinfoil and bake in the preheated oven for 25 minutes.
  5. Baste and continue baking: Remove the pan from the oven and carefully discard the foil. Spoon or baste the glaze over the chicken again to evenly coat all pieces. Return the pan to the oven, uncovered, and bake for an additional 15 to 20 minutes, depending on the size of the chicken breasts.
  6. Optional broil finish: For a beautiful finish and slightly crisp top, baste the chicken one last time, then broil for 1 to 2 minutes until the topping is caramelized. Keep a close eye to avoid burning.
  7. Serve and enjoy: Remove the chicken from the oven, let it rest for a few minutes, then serve with your preferred side dishes. Enjoy the delicious combination of sweet, tangy, and savory flavors!

Notes

  • For a crispier top layer, remove the tinfoil during the last 15-20 minutes of baking, allowing the glaze to caramelize.
  • Ensure even distribution of the raspberry jam mixture over the chicken to guarantee consistent flavor and cooking.
  • Cooking times may vary based on chicken breast size; using a meat thermometer, check for an internal temperature of 165°F (74°C) for safety.
