Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 400°F (204°C) and generously grease a 9×13 inch baking dish with avocado oil spray to prevent sticking.
  2. Assemble Ingredients in Dish: Place the uncooked gluten-free spaghetti into the prepared baking dish, arranging it carefully to avoid breaking the noodles. Top the spaghetti evenly with cubed chicken breast, then season with salt and pepper. Add the mixed vegetables over the top.
  3. Add Sauce Ingredients and Mix: Pour the chicken broth, coconut aminos, rice vinegar, minced garlic, grated ginger, and honey over the ingredients in the baking dish. Lightly mix to combine everything without breaking the pasta.
  4. Bake Covered in Intervals: Cover the baking dish and bake for 15 minutes. Remove from the oven and carefully stir to prevent noodles from sticking. Return to the oven covered for another 15 minutes. Remove again, toss gently while rotating the pasta, then bake uncovered for 10 minutes. Finally, remove the cover and bake an additional 5 minutes uncovered to crisp the chicken and vegetables. Ensure chicken reaches an internal temperature of 165°F (74°C).
  5. Final Stir and Sauce Thickening: Remove from the oven and stir very well to fully combine ingredients and allow the sauce to thicken, taking advantage of starch released from the pasta.
  6. Serve: Plate the noodles and top with chopped green onions for a fresh finish. Serve immediately for best flavor and texture.
