Ingredients

Eggs

  • 6 large eggs

Filling

  • 1 avocado (halved, pitted, and peeled)
  • 2 tablespoons chopped fresh cilantro leaves
  • 2 tablespoons chopped fresh chives
  • 2 teaspoons freshly squeezed lime juice
  • Pinch of garlic powder
  • Salt and black pepper to taste

Garnish

  • Smoked paprika, fresh cracked black pepper, or everything seasoning (for garnish)
  • Fresh chopped cilantro (for garnish)

Instructions

  1. Prepare Eggs: Place the eggs in a large saucepan and cover with cold water by about 1 inch. Bring the water to a boil over medium-high heat and cook the eggs for 1 minute.
  2. Cook Eggs: Cover the saucepan with a tight-fitting lid and remove it from the heat. Let the eggs sit in the hot water for 8 to 10 minutes to continue cooking gently.
  3. Cool Eggs: Transfer the eggs to a bowl and run cold water over them. Add ice cubes and soak until the eggs are cool enough to handle, which stops the cooking process.
  4. Peel and Slice: Drain the eggs well, peel them carefully, and slice each egg in half lengthwise. Remove the yolks and set the whites aside.
  5. Prepare Filling: In a medium bowl, mash the egg yolks and avocado together using a fork until smooth and well combined.
  6. Mix Filling: Stir in the chopped cilantro, lime juice, chives, and a pinch of garlic powder. Season the mixture with salt and black pepper to taste.
  7. Assemble Deviled Eggs: Using a pastry bag or spoon, fill the hollowed egg white halves with the avocado-yolk mixture evenly.
  8. Garnish: Sprinkle the tops with smoked paprika, fresh cracked black pepper, or everything seasoning, and garnish with additional chopped cilantro for a fresh finish.

Notes

  • Ensure eggs are cooled completely before peeling to prevent tearing the whites.
  • You can adjust the lime juice quantity based on your taste preference for tanginess.
  • Use ripe but firm avocados to maintain a creamy yet stable filling texture.
  • Feel free to substitute fresh herbs with dried if fresh ones are unavailable, but reduce quantity accordingly.
  • For an extra kick, add a dash of hot sauce to the filling mixture.
