Ingredients

Filling

  • 1 tbsp oil
  • 1 lb ground chicken
  • 1 cup shredded cabbage (or coleslaw mix)
  • ½ cup shredded carrot
  • 2 green onions, sliced
  • 1 tsp soy sauce
  • ½ tsp garlic powder
  • ½ tsp ground black pepper

Wrapping

  • 8 egg roll wrappers

Instructions

  1. Prepare the filling: Preheat the air fryer to 380°F (195°C). In a mixing bowl, combine oil, ground chicken, shredded cabbage, shredded carrot, sliced green onions, soy sauce, garlic powder, and ground black pepper. Transfer this mixture to an air fryer–safe baking dish.
  2. Cook the filling: Place the baking dish in the air fryer basket and cook for 5–6 minutes, stirring halfway through, until the chicken is thoroughly cooked and the vegetables have softened. Remove and allow the filling to cool slightly as slightly warm filling is easier to roll without tearing the wrappers.
  3. Assemble the egg rolls: Lay one egg roll wrapper flat on a clean surface. Spoon 2–3 tablespoons of the cooled filling near one corner. Fold in the two side edges and tightly roll the wrapper toward the opposite corner. Seal the edge with a dab of water to ensure it stays closed.
  4. Air fry the egg rolls: Preheat the air fryer again to 380°F (195°C). Lightly spray the assembled egg rolls with oil. Place them seam-side down in the air fryer basket, ensuring they don’t overlap. Air fry for 10–12 minutes, turning them halfway through cooking, until the wrappers are golden brown and crispy.
  5. Serve: Remove the egg rolls from the air fryer and serve hot with your choice of dipping sauces such as sweet chili sauce, soy sauce, or duck sauce for a delicious appetizer or snack.
