  • 1 ½ cups heavy or regular cream
  • 6 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 2 cups freshly grated Parmesan cheese

Instructions

  1. Melt Butter: In a large pan or small pot over medium-low heat, combine the butter and cream. Heat while whisking occasionally until the butter fully melts into the cream and the mixture begins to lightly simmer.
  2. Add Seasoning: Once simmering, add the minced garlic and Cajun seasoning to the pan. Continue to simmer and whisk occasionally for about 3 minutes to infuse the flavors.
  3. Add Parmesan: Reduce the heat to low to prevent the cheese from seizing. Gradually add the freshly grated Parmesan cheese while continuously whisking. Heat until the cheese melts completely and the sauce thickens and loosens to a smooth consistency. Taste and adjust seasoning with additional Cajun spice if desired.
  4. Serve: Pour the hot sauce over your pasta of choice. This recipe yields enough sauce for about one 16-ounce box of pasta. If needed, loosen the sauce with extra cream or some reserved starchy pasta water while tossing.
