Shrimp and Sauce

  • 7 oz shrimps
  • 1 tbsp butter
  • 1 tbsp olive oil (extra virgin)
  • 3 garlic cloves (minced)

Instructions

  1. Prepare Ingredients: Spiralize the zucchinis to create zucchini noodles. Finely chop the parsley, mince the garlic cloves, and prepare the lemon zest and juice.
  2. Cook Shrimp: Heat a pan over medium-high heat and add the extra virgin olive oil. Place the shrimps in the pan and sear on one side until slightly pink. Flip the shrimps, add the minced garlic, and cook until the shrimp are fully opaque. Season with salt and pepper. Remove shrimps from the pan and set aside.
  3. Make Sauce: In the same pan, add butter, lemon juice, lemon zest, and vegetable stock or white wine. Simmer the mixture for 1-2 minutes until slightly reduced and flavorful.
  4. Combine and Heat: Add the chopped parsley, zucchini noodles, and shrimp back into the pan. Toss everything together and gently heat the noodles until just warmed through, ensuring they remain slightly crisp.
  5. Serve: Plate the zucchini noodles with shrimp and sauce, and optionally sprinkle freshly grated parmesan on top for added richness.
