Ingredients

Base

  • 6 graham crackers (about 1 package or sleeve)
  • 6 tablespoons salted butter
  • ¼ cup powdered sugar

Topping

  • 2 Hershey’s bars (broken into pieces)
  • 12 regular size marshmallows (cut in half)

Instructions

  1. Prep: Preheat your oven to 350°F (175°C) and spray a mini muffin tin with non-stick cooking spray. Finely crush the graham crackers using a food processor or place them in a ziplock bag and use a rolling pin to crush them until they’re fine crumbs.
  2. Make Base: In a small bowl, combine the crushed graham crackers, salted butter, and powdered sugar. Scoop about one teaspoon of this mixture into each of the 24 mini muffin wells and press down firmly with your fingers to form a compact crumb base.
  3. Bake: Place the muffin tin in the preheated oven and bake for 4 to 5 minutes, or until the edges of the crusts are golden brown. Keep a close eye on them to prevent burning.
  4. Prep Other Ingredients: While the crust bakes, break the Hershey’s bars into 24 small rectangle pieces. Cut each marshmallow in half with kitchen scissors; to prevent sticking, keep the scissors dipped in warm water between cuts.
  5. Assemble: Remove the muffin tin from the oven and place one chocolate piece into each crust-filled cup. Then, place one marshmallow half cut-side down on top of the chocolate in each cup.
  6. Bake Again: Return the tin to the oven and bake for an additional 2 to 4 minutes, or until the marshmallows just begin to soften. For a more toasted top, broil the bites for 1 to 2 minutes—watch them carefully as they can brown quickly.
  7. Cool: Transfer the muffin tin to a cooling rack and let the S’mores Bites cool for 15 minutes. Once cooled, carefully remove them from the tin and enjoy.
