Ingredients

Whipped Ricotta

  • 1½ cups ricotta cheese
  • 8 oz cream cheese
  • ½ cup finely diced white onion
  • 3 cloves garlic, minced
  • 2 tsp salt
  • 2 tsp pepper
  • 3 tbsp olive oil
  • 1 tbsp lemon juice

Basil Pesto

  • 1½ cups fresh basil leaves
  • 2 cloves garlic, minced
  • ¼ cup olive oil
  • ¼ cup grated Parmesan cheese

Instructions

  1. Whip the cheeses: Add the ricotta cheese and cream cheese to the food processor and blend on high for 1 minute until the mixture is light and fluffy.
  2. Add flavorings to cheese mixture: Incorporate the finely diced white onion, minced garlic, lemon juice, olive oil, salt, and pepper into the food processor with the cheeses. Blend on high for another minute until the mixture becomes smooth and fluffy. Set this whipped ricotta mixture aside.
  3. Prepare the pesto: In a clean food processor, combine the fresh basil leaves, minced garlic, olive oil, and grated Parmesan cheese. Blend until the mixture turns smooth and well combined into a vibrant pesto sauce.
  4. Assemble the dish: Transfer the whipped ricotta mixture to a serving bowl and top it generously with the freshly made basil pesto.
  5. Serve: Chill the combined dish and serve it cold with chips or toasted bread slices for a delightful appetizer or snack.

Notes

  • Make sure both the ricotta and cream cheese are at room temperature for easier blending and a smoother texture.
  • The dip can be made a few hours ahead and refrigerated; allow to come to room temperature before serving for best flavor.
  • For a nut-free pesto, omit pine nuts or other nuts typically used, as this version uses just basil, garlic, olive oil, and Parmesan.
  • Adjust the salt and pepper to taste, especially depending on the saltiness of your Parmesan cheese.
  • Serve with a variety of dippers like toasted baguette slices, crackers, or fresh vegetable sticks.
