Ingredients

2 tablespoons extra-virgin olive oil

1 medium onion, chopped

2 medium carrots, chopped

2 stalks celery, chopped

1 medium red bell pepper, chopped

2 cloves garlic, minced

1½ teaspoons Italian seasoning

½ teaspoon ground pepper

¼ teaspoon salt

8 cups low-sodium vegetable broth

1 medium head green cabbage, halved and sliced

1 large tomato, chopped

2 teaspoons white-wine vinegar

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 6–8 minutes until softened.
  2. Add bell pepper, garlic, Italian seasoning, pepper, and salt. Cook 2 minutes until fragrant.
  3. Pour in broth and add cabbage and tomato. Increase heat to bring to a boil.
  4. Reduce to a simmer, partially cover, and cook 15–20 minutes until vegetables are tender.
  5. Remove from heat and stir in vinegar. Serve hot.
