Ingredients

Salad

  • 3 cups strawberries, chilled, tops cut off
  • 3 cups watermelon, chilled, seedless if possible, cubed
  • 2 tablespoons fresh mint, chiffonade or chopped fine

  • ½ cup feta cheese, crumbled

Dressing

  • 2 tablespoons olive oil
  • 1 whole fresh lime, juiced

  • Crushed sea salt flakes, to taste
  • Black pepper, to taste

Instructions

  1. Make the dressing. In a mason jar or small bowl, combine the olive oil, lime juice, honey, crushed sea salt flakes, and black pepper. Shake or whisk well until emulsified and set aside to allow flavors to meld.
  2. Prepare the strawberries. Trim the tops off the chilled strawberries and slice each into 3 or 4 slices to create bite-sized pieces ready for the salad.
  3. Cube the watermelon. Cut the chilled watermelon into 1 to 1½ inch cubes for easy eating and arrange them on a serving platter along with the sliced strawberries.
  4. Toss the salad. Gently stir in the chopped fresh mint, crumbled feta cheese, and chia seeds over the fruit. Drizzle the prepared honey lime dressing on top, adding extra fresh lime juice, sea salt flakes, and black pepper if desired to taste.
