Ingredients

Dressing

  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 to 2 tablespoons quality extra virgin olive oil
  • pinch of salt

Salad

  • 1/2 watermelon, peeled and cut into cubes
  • 1 English cucumber or Hot House cucumber, cubed (about 2 cupfuls)
  • 15 fresh mint leaves, chopped
  • 15 fresh basil leaves, chopped
  • 1/2 cup crumbled feta cheese (more to your liking)

Instructions

  1. Make the dressing: In a small bowl, whisk together the honey, lime juice, extra virgin olive oil, and a pinch of salt until well combined and slightly emulsified. Set this dressing aside to allow the flavors to meld.
  2. Prepare the salad: In a large bowl or serving platter with sides, combine the cubed watermelon, cubed cucumber, chopped fresh mint leaves, and chopped fresh basil leaves. Toss gently to mix the ingredients evenly.
  3. Finish and serve: Drizzle the prepared honey-lime dressing over the watermelon and cucumber mixture. Gently toss again to ensure the dressing coats all the salad components without breaking the fruit. Finally, sprinkle the crumbled feta cheese on top and serve immediately for a fresh, colorful salad.

Notes

  • Use a ripe, sweet watermelon for best flavor.
  • The amount of olive oil can be adjusted based on your preference for dressing consistency.
  • This salad is best served fresh to maintain the crispness of the cucumber and freshness of the herbs.
  • You can add a sprinkle of black pepper for a slight kick if desired.
  • To make it vegan, substitute feta cheese with a plant-based cheese alternative or omit it entirely.
