Ingredients

Salad:

4 cups watermelon, cubed into 1 inch pieces

1 ½ cups strawberries, sliced into rounds

1 ½ cups raspberries

1 ½ cups cherries, pitted and halved

For the Dressing:

2 tablespoon freshly squeezed lime juice

1 ½ teaspoon lime zest

2 tablespoon agave syrup

1 tablespoon of fresh mint, finely chopped

Instructions

  1. Whisk together agave, lime juice, lime zest, and mint in a bowl.
  2. Prep watermelon and berries and place in a large bowl. Drizzle the dressing over top and lightly toss to combine.
  3. Garnish with torn mint leaves.

Notes

  • If you don’t like mint, basil is a great alternative.
  • Eat the salad immediately after making it to avoid sogginess as the fruits release moisture.
  • Use a cherry pitter for easier prep or a chopstick to remove pits from cherries.
  • You can substitute agave syrup with honey or maple syrup for a different sweetener.
