Lay the pieces flat on a cutting board and use a 1 1/4-inch to 1 1/2-inch round or square cookie cutter to cut neat shapes from each slice.
  2. Create Indentations: Using the small end of a melon baller tool, carefully scoop out small half-round indentations from the center of each watermelon piece to create a cavity for the goat cheese filling.
  3. Prepare Goat Cheese Filling: In a bowl, whip the goat cheese with 2 tablespoons of milk, adding more milk if necessary, until the mixture is creamy and pipeable.
