Ingredients

Vegetables

  • 2 cups potatoes, peeled and roughly chopped
  • 1 cup peeled carrots, diced
  • 1/4 small-sized onion, roughly chopped

Seasonings and Liquids

  • 1/2 cup nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt, or to taste
  • 1/2 to 3/4 cup warm water

Instructions

  1. Boil vegetables: Place the peeled and chopped potatoes, carrots, and roughly chopped onion into a pot of boiling water. Cook until the vegetables are tender, which should take about 15 to 20 minutes. Drain the cooked vegetables thoroughly once soft.
  2. Blend ingredients: Transfer the cooked vegetables to a blender. Add the nutritional yeast, lemon juice, garlic powder, onion powder, salt, and warm water. Blend on high until the mixture is smooth and creamy. Adjust the water amount if necessary to reach the desired sauce consistency. Since the vegetables are hot, there is no need for additional heating.
  3. Serve: Pour the blended vegan cheese sauce into a serving bowl. Use immediately as a dip or sauce for your favorite dishes.
  4. Store leftovers: Place any remaining sauce in an airtight container and refrigerate. It will keep fresh for up to one week.

Notes

  • You can adjust the seasoning and salt to suit your taste preferences.
  • If the sauce is too thick, add additional warm water a tablespoon at a time while blending.
  • This cheese sauce works well as a dip, topping for baked potatoes, or a creamy pasta sauce.
  • Ensure vegetables are drained well after boiling to avoid a watery sauce.
  • This recipe is free from nuts, dairy, and gluten, suitable for various dietary needs.
