Ingredients

Fruit

  • Assorted fruit of your choice (strawberries, blueberries, mango, kiwi, dragonfruit), cut into cubes

Jelly Mixture

  • 3 cups water
  • 1/2 cup sugar
  • 1 ¼ tsp agar agar powder (use up to 2 tsp for firmer jelly or when serving outside the mold)

Instructions

  1. Prepare the fruit: Cut the assorted fruits into small cubes. Place these fruit pieces evenly into an ice cube mold or any container you prefer for setting the jelly.
  2. Make the jelly base: In a small saucepan, combine 3 cups of water, 1/2 cup sugar, and 1 ¼ teaspoons of agar agar powder. Whisk the ingredients together until fully blended.
  3. Cook the jelly mixture: Bring the mixture to a boil over medium heat, then reduce to a simmer and let it cook for 2 minutes, stirring occasionally to ensure the agar agar dissolves completely.
  4. Assemble the jelly: Carefully pour the hot jelly mixture over the fruit cubes in the molds or container until the fruit is just covered.
  5. Set in refrigerator: Place the mold/container in the fridge and let it chill for around 2 hours or until the jelly has completely set.
  6. Serve: Once the jelly is firm, unmold just before serving. Note that the jelly may release water if stored more than 24 hours, which is natural – discard the liquid before serving.

  • For firmer jelly or if serving outside a mold, increase agar agar powder up to 2 teaspoons.
  • Use fresh, ripe fruits for the best flavor and appearance.
  • Jelly may release some water if stored for more than a day; discard the liquid for optimal texture.
