Ingredients

For the Base:

1 ½ cups almond flour

¼ cup oat flour

⅓ cup melted refined coconut oil

¼ cup pure maple syrup

1 teaspoon vanilla extract

¼ teaspoon salt

For the Berry Middle:

1 cup berries (fresh or frozen)

1 ½ tablespoons pure maple syrup

1 tablespoon water

½ teaspoon cornstarch

For the Oat Crumble Topping:

½ cup oat flour

¼ cup oats

2 tablespoons almond flour

¼ cup melted refined coconut oil

1 tablespoon pure maple syrup

½ teaspoon vanilla extract

Pinch of salt

Instructions

  1. Preheat & Prepare the Base: Preheat the oven to 350°F (175°C). In a mixing bowl, combine the almond flour, oat flour, and salt. Add the maple syrup, melted coconut oil, and vanilla extract. Mix well until the dough comes together. Press the mixture evenly into the bottom of a greased or parchment-lined 8×8 baking dish. Set aside.
  2. Prepare the Berry Layer: In a small pot, combine the berries, maple syrup, and water. Heat over medium-low heat. Once the berries soften, mash them with a potato masher or fork. Add cornstarch and simmer for 5-10 minutes until the mixture thickens. Remove from heat and refrigerate to cool and thicken further.
  3. Make the Crumble Topping: In a separate bowl, combine oat flour, oats, almond flour, and salt. Add melted coconut oil, maple syrup, and vanilla extract. Stir until everything is well combined. Set aside.
  4. Assemble the Bars: Once the berry mixture thickens, pour it evenly over the almond flour base. Top with the crumble topping, squeezing it between your fingers to create chunky clumps. Spread the crumble over the berry layer.
  5. Bake: Bake for 25 minutes or until the topping is golden brown and the filling is bubbly. Let cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  6. Slice & Serve: Once cooled, cut into squares and enjoy!
