Ingredients

Cream Filling

  • 2 1/2 cups confectioners’ sugar
  • 1 1/2 tablespoons corn syrup
  • 1 1/2 tablespoons water
  • 1 1/2 tablespoons butter, cubed
  • 1 teaspoon orange extract or oil
  • 1/2 teaspoon vanilla extract
  • Orange food coloring, to desired color

Chocolate Coating

  • 1 1/2 cups dark or milk chocolate (your preference)
  • 1 teaspoon vegetable shortening

Instructions

  1. Prepare the cream filling: In a mixing bowl, combine confectioners’ sugar, corn syrup, water, cubed butter, orange extract, vanilla extract, and orange food coloring. Mix until fully combined and the mixture becomes sticky and smooth.
  2. Chill the filling: Wrap the mixture tightly in cling wrap and place it in the freezer. Allow it to chill for 30 minutes so it firms up.
  3. Melt the chocolate: Using a double boiler, melt the chocolate completely. If the melted chocolate is too thick for dipping, stir in 1 teaspoon of vegetable shortening to thin it slightly and achieve a smooth consistency.
  4. Shape the filling: Quickly remove the chilled filling from the freezer and cut it into pieces of your desired size. Roll each piece to your preferred thickness. Return the cut pieces to the freezer for 10 to 15 minutes to firm them up again before dipping.
  5. Dip the creams in chocolate: Work in small batches, taking a few pieces out at a time from the freezer. Dip each piece thoroughly into the melted chocolate, coating completely.
  6. Set the chocolates: Place the dipped creams on parchment paper or a silicone mat to set and harden at room temperature or in the fridge if needed.
  7. Enjoy: Once the chocolate coating has hardened, the treats are ready to enjoy. Serve and savor responsibly.

Notes

  • Use a double boiler to gently melt chocolate and avoid burning.
  • Add vegetable shortening to chocolate to improve dipping texture and shine.
  • Keep the cream filling chilled at all times to prevent stickiness while shaping and dipping.
  • Store the finished chocolates in an airtight container in a cool place.
  • Adjust the orange food coloring amount to achieve your preferred shade.
  • Feel free to use dark, milk, or even white chocolate depending on taste preference.
