Instructions

  1. Blend the Ingredients: Combine the ginger, turmeric, mandarin oranges, lemon juice, and ½ cup of coconut water in a blender. Blend until smooth.
  2. Strain the Mixture: Pour the blended mixture through a fine mesh strainer into a bowl to remove any pulp. Ensure you have about 1 cup of liquid by adding extra coconut water if necessary.
  3. Bloom the Gelatin: Place ¼ cup of the strained liquid into a small bowl. Sprinkle the two tablespoons of gelatin evenly over the surface and allow it to bloom (absorb and soften) for a few minutes.
  4. Sweeten and Heat the Liquid: Transfer the remaining strained liquid to a small saucepan, add two tablespoons of honey, and heat gently on low. Stir constantly without letting the mixture boil.
  5. Mix in the Gelatin: Once the liquid is warm, add the bloomed gelatin. Stir vigorously until the gelatin is fully dissolved and the liquid is smooth.
  6. Mold the Gummies: Pour the gelatin mixture evenly into silicone gummy molds.
  7. Refrigerate to Set: Place the molds in the refrigerator for about 1 hour or until the gummies are fully set and firm.
